Microencapsulation by use of coacervation

Abstract

Process of microencapsulation as well as mechanism of coacervation were characterized. Five known from the literature methods of microencapsulation by use of coacervation were given. Advantages and disadvantages of microencapsulation by use of coacervation and possibilities of its use in food processing were mentioned.
