Title

Technological assessment of grain and flour of selected winter cultivars

Abstract

The test material was 11 cultivars of winter wheat harvested in the years 1994-1996 (Begra, Panda, Olcha, Almari, Gama, Wilga, Emika, Kobra, Roma, Jawa, Juma), coming from the Strain Test Station at Tarnów Śląski. The assessed cultivars were found to differ in the qualities tested. Little differences were only those in the terminal temperature and time of flour gelatinization. Activity of alpha-amylase, measured by the falling number, was low in the wheat flour. The amount of gluten, sedimentation value and baking value of flour were positively influenced by total protein and activity of alpha-amylase. Starch grains in the wheat culivars tested were characterized by high durability when kept at 95°C, and after cooling down to 50°C they were hard to retrograde. Breads baked of the wheat flour differed in their volume, overbake and crumb porosity.
