Title

The value of grass pea seeds for freezing and canning

Abstract

Seeds of flat pea cvs Derek and Krab with the dry matter content at the level of 33% were used for freezing and canned preserves. The content of dry matter, simple sugars, total sugars, starch, dietary fibre, total and protein nitrogen, ash components, and total acids and the level of active acidity (pH) were determined in the raw and blanched material and in the final products after 6-month storage. The seeds of the two cultivars were characterized by a similar content of the analysed components, except for sugars and starch. The blanching of seeds reduced the level of sugars and ash components. The preservation and storage of products and the culinary treatment of frozen seeds induced the reduction of all the compounds analysed. It was found that cooked frozen seeds contained greater quantities of all the compounds than the canned preserves. As compared with Derek, the cooked frozen and canned products of cultivar Krab obtained higher scores in sensorial valuation.
