Title

Wheat bread quality depending on the addition of bran derived from various buckwheat varieties

Abstract

The objective of the study was to evaluate the impact of three various buckwheat varieties (Kora, Luba, and Panda) on the properties of wheat bread dough and quality of wheat bread. Buckwheat bran was applied as a replacement of wheat flour, and constituted 10, 20, 30, 40, and 50 % of the flour weight. The prepared samples were assessed as regards their starch features using a Brabender amylograph. The rheological properties of wheat and wheat-buckwheat doughs were determined using a Brabender farinograph. The wheat and wheat – buckwheat breads, backed using a one – phase method, were assessed as regards their volume and overbake. Also, their crumb porosity was evaluated. It was found that the buckwheat contained in the flour buckwheat blends and in the dough mass changed their properties. The amylographic analysis proved the amount of buckwheat added caused only the initial temperature of gelanization to change. The final temperature of gelanization and the maximum viscosity of gruel of blends containing the Panda-type of bran were lower than those of samples containing bran of other varieties. The wheat dough proved to have the best rheological features. Along with the increasing amount of buckwheat products added to the wheat flour, the following farinographic features became worse: consistency, softening, and quality number. Based on batch samples of the bread baked, it was found that the bread volumes decreased along with the increase in the amount of buckwheat added to the wheat flour, whereas the crumb porosity improved. Neither amount of bran added to the wheat nor the bran variety type impacted the overbake of the bread baked.
