Title

Influence of catalysts on effectiveness of starch oxidation process and its physico-chemical properties

Abstract

Native starches: potato, maize and waxy maize were subjected to oxidation process by means of hydrogen peroxide in the presence (and absence) of Cu (II) and Fe(II) ions used as catalysts. Native and modified starches were analyzed on content of carboxylic and aldehyde groups, amylose and phosphorus. Also water binding capacity as well as solubility in water and pasting characteristics analyses were done. Basing on obtained results, it was concluded, that Fe(II) ions employed as catalyst in starch oxidation process caused the highest increase of carboxylic and aldehyde groups used in the investigated starch and drastically decreased amount of amylose content (about 60%). The most susceptible towards applied oxidation conditions regardless of catalyst presence was potato starch. Highest decrease of phosphorus content was discovered in potato starch oxidized in presence of catalysts (about 30%). Employing catalysts caused total solubility of potato starch at 80ºC, and these catalysts increased their solubility of other starches. Applied oxidation conditions significantly diminished parameters of pasting profile. Oxidation of starch by means of hydrogen peroxide in presence of Cu(II) ions as catalyst caused thermal stability of the obtained whole range of the pasting.
