Title

Use value and quality of fillets of carp fish (Cyprinidae) reared in polyculture

Abstract

The research objective was to compare the use value and quality of fillets of three Cyprinidae fish species: common carp (Cyprinus carpio L.), grass carp (Ctenopharyngodon iddela Val.), and bighead carp (Aristichtys nobilis Rich.) reared in a polyculture. Fish were captured from farm ponds to raise fish in the Province of Lublin. The following was analyzed: morphometric dimensions, weight and percent content of body parts, physical-chemical characteristics of the fillets (pH, electrical conductivity, colour), chemical features of the fillets (water, mineral compounds as ash, protein, fat, selected macro- and microelements, TBARS), and, also, value of energy and INQ. Fish of the three assessed species that had a similar weight (about 1000 g) differed significantly (p ≤ 0.05) in their body dimensions (length, height, and width); however, they did not differ in the weight of carcass and fillet. It was found that the grass carp had the highest percent content of carcass and fillet (66.5 and 48.8%, respectively). The pH value of the fillet of common carp analyzed 24h post mortem was significantly (p ≤ 0.05) the lowest (6.69) and its electrical conductivity was significantly (p ≤ 0.05) the highest (91.88 mS·cm-1), and its colour was the brightest (the highest L* = 55.51) compared to the fillets of bighead carp (pH24=7.31, EC24=2.10 mS·cm-1, L* = 52.58, respectively) and of grass carp (pH24=7.08, EC24=1.33 mS·cm-1, L* = 54.86, respectively). The lowest value of the b* (-1.09) was measured in the tissue of grass carp. The content of fat (9.60%) in the fillet of bighead carp was significantly (p ≤ 0.01) the highest with the highest INQ; however, at the same time, the oxidative stability of the lipids thereof was the lowest (the highest TBARS = 0.43 mg MDA kg-1 of the muscle tissue) compared to the fillets of common carp and grass carp. In the fillet of common carp, the concentration of Fe (9.97 mg·kg-1) was found to be significantly (p ≤ 0.05) the highest and the concentration of Cu (9.97 mg·kg-1) to be significantly (p ≤ 0.05) the lowest.
