Abstract
The objective of the research was to analyze the slaughter value and physicochemical parameters of buck kids slaughtered at the age of 150 days. At the age of 60 days, the buck kids studied were weaned on a balanced mixture containing 10 % linseeds as their fattening feed. It was found the their slaughter efficiency increased (by 45.80 %) statistically significantly (p ≤ 0.05) as did the quantity of valuable cuts (leg, loin) from the experimental group. Moreover, an the latter group a statistically significantly (p ≤ 0.05) lower amount of fat was found in the carcass (by approximately 1 %). However, the meat content in the leg (70.60 %) and in the carcass (60.71 %), although somewhat higher in the experimental group, appeared to be statistically insignificant. The meat of buck kids fed with linseeds was darker (L* 42.60) – p ≤ 0.01. What is more, it contained more (p ≤ 0.01) dry matter (24.32 %) and proteins (20.97 %), but less (p ≤ 0.05) fat (1.92 %). From the sensory point of view, both the meat of buck kids fed with linseeds added and the meat of buck kids in the control group showed a similar culinary usefulness confirmed by the fact that no statistically significant differences were found.
