Effect of production method of strawberry juices on the content of anthocyanins and colour

Abstract

The objective of the study was to determine quality changes in strawberry juices stored at 4 °C during a period of 1, 2, and 3 months. Four (4) juice variants were prepared: (1) without mash maceration; (2) without mash maceration and with the addition of taxifolin; (3) after mash maceration using a Panzym BE enzymatic preparation; and (4) after mash maceration using a Panzym BE enzymatic preparation with taxifolin. In the juices studied, the contents of the following components were determined: total polyphenolic, anthocyanins, catechins, vitamin C; the antioxidant activity was also analysed. The juice after mash maceration and without any additions was characterized by the highest total content of anthocyanins (47.07 mg/100 ml); the juice after mash maceration and with the addition of taxifolin had the highest content level of vitamin C (11.73 mg/100 ml). Furthermore, this juice (after mash maceration and with taxifolin) had the highest content of polyphenols and catechin (194.1 mg/100 ml and 17.9 mg/100 ml, respectively). Among the juices studied, the highest antioxidant activity (14.4 µmol Troloxu/ml) was found in the juices after mash maceration and with taxifolin added. While storing the juices analyzed for 3 months, it was also found that the contents of anthocyanins, catechins, vitamin C, and total polyphenols were reduced, and this fact had an effect of a lower antioxidant activity. The degradation rate of components and the decrease in the antioxidant properties were most intense during the first month of storing the juices.
