Abstract
The objective of the study was to compare the slaughter values and some physicochemical properties of chicken meat of chickens fasting 8-hour and of the chickens having permanent access to feed and water until slaughter. The experiment covered 42 Hybro N. broiler chickens, which were divided into 3 groups, 14 individuals each, of equal sex participation, i.e. a control group I received feed and water until the slaughter; the group II was deprived of feed, but not of water; and the group III was deprived of both feed and water. After the fasting, the birds were slaughtered. The acidity of their breast muscles was measured after a 15 minute period (pH1). The following parameters were calculated: body weight loss as a result of a difference between the weight before and after the fasting, and slaughter performance index. 24 hours after the slaughter took place, the meat underwent physicochemical examination (pH24, colour lightness, free water content (Fw), water binding capacity (WBC), and percentage of bound water in total water content (WHC). The Fasting did not affect slaughter performance of the broiler chickens, except for the liver weight and body weight loss in which significant differences were found between the groups. As to physicochemical properties, an effect of fasting was observable in relation to pH24 of leg and breast muscles, colour brightness of leg muscles, water binding capacity of breast and leg muscles, and percentage of bound water in total water (WHC) of breast muscles.
