Abstract
In the studies, conducted in 2002, the balances of the milk purchase from 5 big dairies from the areas, being most representative for the Polish dairying, were utilised: the central, north-eastern and the southeastern Poland (1/3 of the total national cow population, more than 2/3 of the total purchased milk and 60% of total cattle population). In the studies, the mean size of monthly delivery from one farm (for intervals: up to 2000 litres and above 2000 litres) and the number of deliveries (for intervals: up to 2000 deliveries, from 2001 to 4000 deliveries and above 4000 deliveries) were calculated. Also, the season of the raw milk purchase, classified into two categories: 1) winter feeding (XI-IV) and 2) summer time feeding (V-X) was considered, The sum of the raw milk deliveries was presented with consideration of the quality grades and classification of geographic regions, number of deliveries, the size of the mean delivery and the seasonality of milk purchase. The size of the differences between the levels of the particular factors was estimated, using chi2 test. It was shown that in 2002, the favourable tendencies of changes in Polish dairying were observed. The concentration of the dairy production by means of the decrease of the number of suppliers as well as via the increase of the mean monthly milk delivery was found. In the scale of the year, the rise in the purchase of the raw milk in the studies dairy plants had place. It was revealed that the main reserves of the quantitative increase of Extra grade milk purchase are found in the upgrading of the quality of raw milk, classified in the so-far grade I and in concentration of production and purchase of the raw milk. At the same time, it was demonstrated that the increase of the mean delivery of the raw milk was favourable for quantitative increase of the purchase of the good-quality raw milk. The rise of the mean delivery compensated the decrease of the number of suppliers and allowed the increase of the milk purchase in the scale of the year.
