Effects of jerusalem artichoke flour on the level of glucose in blood serum of rats
Abstract
The flour from Jerusalem artichoke added to a modified diet AIN-93 gave hypoglycemic effects in blood serum of rats. The lowest level of glucose in blood serum was in the group of rats where the addition of Jerusalem artichoke flour was 10%. In group IV the level of glucose increased, but it was still lower than that in the control group.
