Risk analysis of food

Abstract

Assurance of food safety is a problem of great weight all over the world. Both producers and governments are responsible for coordination of the methods and systems of food safety assurance. This should be based on scientific research and professional risk analysis. In the paper law regulations for food safety assurance in Poland and the European Union, definitions and the idea of the risk analysis as well as the potential food health hazards are presented.
