Title

The assessment of oszczypki cheeses quality and the evaluation of milk and whey properties

Abstract

The production process of oszczypki cheeses in three flock-master huts was followed up. Chemical composition and physical properties and microbial analyses were done on sheep milk, oszczypki cheeses and whey during the sheep’s milking period. It was concluded that the production process of oszczypki cheeses was similar in those three flock-master huts. The oszczypki cheeses differed in searched parameters depending the place-hut and time production. The microbial quality w as not proper.
