Spectrophotometric evaluation of aspartame in selected „LIGHT” food products

Abstract

The aim of this study was to adjust a simple and fast method for aspartame content determination using VIS spectrophotometry. This method is based on the reaction of aspartame with 1,4-dioxan, dimethyloformamide and p-chloranil and the measurement of the colour complex absorbance. The experimental material was aspartame sweetened food concentrates and a sweetener in tablets. The results of preliminary work showed that the method used allows for fast and simple aspartame content evaluation in selected food products.
