Functional food made with oilseeds and oils
Abstract
Among functional food important group is enriched with some oils/fatty acids and certain compounds from oilseeds. These fatty acids are: essential fatty acids, n-3 fatty acids eg. Epa i DHA from fish oils and gamma-linolenic acid. On the world market we can find more and more products enriched with some fatty acids eg. beverages, spreads, bread, chocolates, noodles, milk produsts. Soyabean protein has well known and confirmed by FDA healthy effect: daily consumption of 25 grams of soyabean protein reduce risk of cardiovascular desease. A very new and very important functional fatty products are spreads with plant sterol esters which can reduce blood cholesterol up to 20%.
