Title

Microstructure of meat stuffings and products as affected by the selected functional proteins

Abstract

Effect of the sodium caseinate and soya protein isolate SUPRO 500E on microstructure of model stuffings and meat products was studied, without the salt additive and with 3% salt additive. The evaluation of microstructure was conducted on stained preparations, with the application of image analysis – MultiScan v 5.05. The addition of salt affected very significantly the distribution of fat in the structure of the examined stuffings and products. Muscular proteins played the most significant role in formation of the microstructure of stuffing and highly comminuted product. Addition of sodium caseinate in presence of salt had a highly significant effect on the improvement of fat distribution. Influence of soya proteins isolate was similar to muscular proteins in respect of their effect on microstructure of stuffing and of the product.
