Title

Prediction of the colour of red beet pigments and caramel solutions mixtures

Abstract

The aim of this study was to determine whether the response surface method can be used to estimate the colour quality of betalains and caramel mixtures. It was found that this method provides possibilities for the predict in such mixtures colour parameters in the CIE system and their naturalness and desirability. Acidity within the examined rangę of (pH 2.4-4.5) had no influence on the colour quality.
