Abstract
The objective of the research was to evaluate the effect of some selected technological additives on the properties of dough and bread prepared using wheat flour and buckwheat brini. The experimental material consisted of mixtures made from wheat flour and buckwheat brini. The buckwheat brini were applied as a replacement for the wheat flour, and its amount constituted 10, 20, and 30 % of the flour weight. Moreover, in order to improve the quality of bread, dry gluten or baking powder were added to the mixtures; their amounts were 2 or 4%. In the wheat flour and the mixtures prepared, the following was determined: content of total protein, rheological properties using a Brabender farinograph, and properties of the amylose-starch complex using a Brabender amylograph. Furthermore, an experimental bread-baking test was performed using a Biskupski method. The buckwheat brini were characterized by a much higher content level of protein then the wheat flour. The value of dough’s amylographic properties increased with the increasing amount of buckwheat brini added. The application of dough raising substances caused the maximum viscosity of dough to significantly increase compared to the material without the technological additives and with gluten added. The increased content of buckwheat brini in the mixtures attributed to the increase in the water absorption of the samples analysed. The development time and the softening of the mixtures’ dough with buckwheat brini had higher values than the samples without the brini. The mixtures containing 10% of the brini showed the longest development time and the best dough stability. The use of baking powder in the mixtures caused the water absorption to decrease and the rheological properties of the dough to improve compared to the material without the technological additives and with the dry wheat gluten. The highest volumes had the bread made from mixtures of wheat flour and 10 % of buckwheat brini. The application of baking powder, as well as the increase in the amount of baking powder being added to the samples negatively impacted the bread volume. On the other side, the dry wheat gluten added, as well as the increasing of its measure caused no significant changes in the bread volume if compared to the bread without the technological additives.
