Abstract
The objective of the research performed was to determine the effect of the fractional composition of dietary fibre in aronia pomace, as well as of the process conditions (pH and temperature) on the binding capability of selected metals: cadmium, lead, calcium, and magnesium. The experiment was conducted under the simulation conditions of: human gastrointestinal tract, milk environment, and yoghurt environment. It was statistically significantly confirmed that the aronia fibre was a Pb and Cd sorbent. At the same time, the aronia fibre is characterized by a diversified ability to absorb the above named metal ions and the sorption depends on the pH value of environment. It was proved that the Pb sorption in an acid environment depended significantly and directly proportional on the fractional composition of the fibre. In the case of magnesium desorption from the aronia fibre, there was found no significant effect of the type of preparation or of the process conditions on the desorption level. However, the desorption level of calcium ions in the pomace depended on the conditions of the environment.
