Determination of p-hydroxybenzoic acid esters in fruit and vegetable juices using a colorimetric method

Abstract

p-Hydroxybenzoic acid esters (parabens) exhibit antimicrobial activity higher than the majority of conservants, and almost independent on pH. Our studies aimed at development of a simple , convenient and easy to use in most laboratories method of parabens determination in fruit and vegetable juices. A colorimetric method based on a formation of a light-absorbing dye, as a product of reaction of phydroxybenzoic acid released from parabens with aminoantipyrine, occured to be sufficiently precise and sensitive. Optimal conditions of sample preparation and performance of an assay were also established. This developed procedure was applied for parabens determination in apple, blackcurrant and tomato juices, fortified with these antiseptics at concetration of 0.02%, 0.05% and 0.1%.
