Abstract
The objective of the research study was to determine the effect of using mechanically deboned (MDM) and desinewed (DSM) poultry meat (DSM) on some selected quality characteristics of sterilized pâtés. The quality of pâtés was determined 48 h after they were produced. The following was determined in the pâtés: pH, amount of thermal leakage after thermal processing, colour parameters, penetration force, contents of water, protein, and fat content; the sensory quality was also assessed. It was found that both the MDM and the DSM meat could be used in the manufacture of appertized poultry pâtés. The pâtés containing mechanically deboned poultry meat were characterized by a lower value of L* colour parameter (57.2) and by a higher value of a* colour parameter (7.2) compared to the pâtés containing desinewed poultry meat (60.8 and 5.8, respectively). No significant (p < 0.05) impact was reported of the type of meat used on the value of pH, which was 6.5 as for the two pâté variants, nor on the amount of leakage after the thermal processing of the pâtés containing deboned and desinewed poultry meat (2.9% and 3.2%, respectively). The value of penetration force of the pâtés containing MDM was 2.5 N and did not significantly (p < 0.05) differ from the penetration force of the pâtés containing DSM (2.4 N). The type of raw material had no impact, either, on the basic chemical composition. The contents of water, protein, and fat in the pâtés containing mechanically deboned poultry meat amounted to [%], respectively: 59.1%, 17.2%, and 22.5%. The pâtés containing desinewed poultry meat were characterized by a water content of 60,0%, protein content of 17.5%, and fat content of 21.2%. No significant (p < 0.05) differences were found, either, in the selected characteristics of sensory quality between the two variants of the pâtés analyzed.
