Title

Food allergens as health risk factors

Abstract

In the paper the risks resulting from the presence of allergens in food were evaluated. Special attention was paid to factors enhancing occurrence of food allergies including risks caused by cross reactions as well as risks resulting from introduction of highly processed and genetically modified food. There was indicated a need of introducing onto food packaging information concerning possible allergenic hazard in order to avoid incidence of anaphylactic reactions.
