Influence of the medium gamma radiation doses on the baking value of wheat, rye and tricitale flours

Abstract

In the research the baking values of the following flours were compared: wheat type 550 and 850, rye type 720 and triticale type 680, native flours and exposed to radiation at the doses of 2; 3 and 5 kGy. Irradiation of wheat flours enabled to isolate from them the higher amounts of wet gluten and a considerable reduction of its spreadibility. As the radiation dose 2-5 kGy increased, the decrease of gluten index in wheat flours was observed, it did not, however, lowered their baking value. Under the influence of the doses of gamma radiation in flour the baking value improved. Slight changes in the falling number informed us that α-amylase activity has been maintained.
