Physical and chemical properties of plain yoghurt made from milk concentrated using the ultrafiltration and traditional methods

Abstract

In the research work the physical and chemical properties of plain yoghurt made from milk concentrated by ultrafiltration (UF) method and yoghurt made from milk which was concentrated by addition of skim milk powder were evaluated. Chemical composition, pH, titratable acidity and content of mineral compounds were determinated. Sensoric evaluation was also carried out. Yoghurt made from UF milk retentate contained more protein and less lactose and its titrational acidity was lower in comparison with yoghurt made from milk which was concentrated by addition of skim milk powder. Those differences were statistically significant. Yoghurt made from UF retentate contained more mineral components such as calcium, phosphorus and magnesium and less mineral components such as sodium and potassium in comparison with yoghurt produced using the traditional method. The coagulum of yoghurts made from UF retentate were more firm than coagulum of yoghurt made from milk which was concentrated by addition of skim milk powder.
