Probiotic food as related to health safety

Abstract

Definitions of probiotics, prebiotics, synbiotics and probiotic food were described in the paper. Also the characteristic of gut microflora and probiotic bacteria was presented. The benefits of probiotic bacteria occurrence in human gastric tract and necessity of safety assurance of probiotic food were pointed.
