Proposition of converting factors for calculation of total phosphate contents in mechanical separated poultry meats (MSPM) and in poultry meat products with addition of MSPM

Abstract

This work aimed to measure the content of total phosphorus in Mechanically Separated Poultry Meat (MSPM) and in poultry meat products containing MSPM and evaluate a converting factor for calculate total phosphate. Proposed converting factors for the three examined MSPM and for the exemplary assortments of poultry products enable us to evaluate properly the health property of the food produced. Proposition for converting factors is 0.13 for all types of MSPM and 0,14 for poultry meat products with max. 60% of added MSPM.
