Quantitative determination of aspartame in food products using titrimetric method

Abstract

The aim of this work was the verification of the possibility of a titration method with perchloric acid usage for the quantitative determination of aspartame in “light” products. However, a trial of validation of this method was undertook. To assess the method and to determine it’s suitability, the linearity, the selectivity, the accuracy and the repeatability of aspartame content determination in samples investigated were specified. The sweetener average recovery value, depending upon level of fortification and kind of sample, ranged from 80 to 119% and relative standard deviation value characterizing the range of results did not exceed 5%.
