Abstract
The paper presents major food safety hazards and the consequential strategy for controlling food quality in Europe and Poland. The European protection strategy for consumers and food producers was discussed, including legal protection of consumers, government-monitored system of controlling food products and production, monitoring as a strategic tool to identify possible risks, and internal control in production plants. Certification of food products has been acknowledged as a substantial protection element of producers’ and regional food consumers’ rights. Additionally, there were discussed needs for the certification of regional food products in Poland, as well as the purposefulness of establishing a National Institution of Food Certification.
