Some aspects of modified atmosphere application in food storage

Abstract

The development of new food packaging techniques is the answer of food technologists to the consumer demand for minimally processed, fresh products of high stability. Therefore, in this review some aspects of modified atmosphere applications for extending of food shelf life has been discussed. Special attention has been paid to the properties of used gases and packaging materials as well as to the problems of microbiological safety of food products.
