Title

Some technological properties of polish winter triticale varieties from harvesting in 1997 year

Abstract

Using criteria obligatory for wheat, the technological value of 12 Polish triticale varieties was estimated and compared with wheat cultivated in the same condition. It was shown, that in distinction from wheat flour, farinographic and gluten index evaluation were not sufficient indicators of triticale flour baking quality, because bread quality from the majority of triticale varieties did not correlate with these parameters.
