Texture and structure of some globular protein gels
Abstract
Gelation is one of the most important functional properties of proteins. Gel texture can be evaluated by measurements of the force necessary to break the structure and the value of strain. The aim of this research was to find relationships between texture and structure of the gels. Whey protein isolate, bovine serum albumin, pig serum albumin and β-lactoglobulin were used. The greatest value of shear stress at fracture was noted at pH, at which there is probably a balance between repulsive and attractive forces in the proteins molecules. For the gels obtained from different proteins and characterized by similar shear stress value, different structures were observed. Maximum value of shear stress was determined by the protein concentration.
