Abstract
The staling rate of four sorts of wholemeal bread has been characterized in the paper. The samples were kept in room temperature for seven days. The quality changes of analyzed products were evaluated by organoleptic, rheological and physico-chemical analyses. It has been found that changes of texture parameters significantly correlated with the changes of sensory and physico-chemical parameters of breads. However, not all of them might be used for the comparison of staling rate of different bakery products. The best for this purpose seemed to be the measurement of shear force and shear work of crumb but the problem needs further studies. On the other hand springiness and cohesiveness could be applied to the evaluation of staling rate of the same sort of product stored in different conditions.
