The evolution of fasting traditions of assyrian immigrants in Sweden
Abstract
Fasts of Christian Assyrians in the Middle East are a manifestation of religious practices and their culinary aspect may be surprising for many people. A fasting diet containing only vegetarian dishes enriched the national cuisine and allowed for the preservation of its ancient character. Results of the opinion polls prove that the Assyrian immigrants in Sweden depart from the fasting practices; it is almost certain that in the nearest future, many of the national dishes shall disappear from the menu. Moreover, it is doubtful that the recently published cookbooks or the organization of culinary performances and shows could build up the respect for the rich culinary traditions of ancestors.
