Usage of conductometry for ash content measurement in honey
Abstract
The aim of this research was to estimate the relation between ash content and electric conductivity in honey. Samples of different honeys (light and dark) from Poland were the research material. Content of ash, depending on the kind of honey, was from 0.04 to 0.67 g/100 g and electric conductivity from 0.9 to 10.7· 10-4 S/cm, respectively. Statistical analysis proved a good correlation between ash content and electrical conductivity. Measurement of electrical conductivity is quick and easy, might be applied for measurement of ash content in honey.
