Title

Effect of storage time on quality and functional properties of eggs from hens included in conservation programme in Poland

Abstract

The objective of the research study was to assess the effect of storage time on selected quality parameters of eggshell as well as on physical characteristics and functional properties of content of eggs from the following native breeds of hens: Greenleg Partridge (Z11) and Yellowleg Partridge (Ż33), both included in the conservation programme of genetic resources in Poland, and from the American Rhode Island Red hen breed (R11). In the 33rd week of life of the hens studied, 90 eggs were taken from them with the purpose to assess them qualitatively on the 1st, 14th, and 28th day of egg storage. Immediately after the eggs were laid, they were characterized, regardless of the chicken breed, by a good quality and beneficial functional properties, i.e. by vivid colour of egg yolk (6.96 – 7.48), high value of egg white height (7.47 ÷ 8.37 mm), and high values of Hough units (87.95 ÷ 91.97). As the storage time was extended, changes occurred in the eggs that were connected with the egg aging processes, i.e.: weight loss of eggs, increase in egg yolk weight, decrease in the height of egg white along with the decrease in the Hough unit values, and alkalinization of egg whites and yolks. The storage time did not cause the foaminess of egg white to decrease. No effect was found of the storage time on the density, weight, and strength of the eggshell. However, the shell thickness of eggs from Z11 and Ż33 hens slightly decreased as the storage time lengthened. Owing to the low dynamics of aging-processes related processes, the eggs from hens of all the breeds analyzed were characterized by good quality parameters (colour of egg yolk: 7.44 – 7.96; height of egg white: 6.06 – 7.41; Hough units: 80.21 – 87.26) and beneficial functional properties; this fact proves that it is possible to collect eggs from hens of the Polish native breeds and to store them for certain periods of time.
