The assurance of food safety in wild game carcass trading

Abstract

The consumption and processing quality of venison is influenced by animal species, health, age and gender as well as after-slaughter processes in the hunting site. Food safety of venison depends on slaughter, hygiene of exsanguinations, chilling and further procedures in trade centers and during handling and transport. It seems justifiable to establish uniform, transparent regulations for the companies and businesses dealing with venison, so that quality assurance of subsequent products could controlled and would be in compliance with veterinary regulations, hunting laws and food law regulations.
