Abstract
Introduction. In light of the fundamental, game-changing changes associated with the digitization of both food information and dietetics, the aim of this work is to critically analyze currently used food ingredient information systems, evaluate them for digital applications, and then propose a coherent system for assessing the bioactive value of food, indexing and certification for use in digital dietetics. The work is conceptual and systems-based.
Results and Conclusions. A review of the indexes and indicators currently used for dietary food assessment was conducted and their suitability for digital dietetics applications was determined. The widely used NUTRI-SCORE index was critically assessed, as were battery-based systems used in Italy and the United Kingdom. The F-Food food certification system was used as the basis for digitization. The EU FFood certification mark uses three profiles as access criteria: beneficial bioactive ingredients (requiring at least one nutritional claim), unfavorable ingredients and unfavorable production processes. Information about products bearing the F-Food label was digitized to create the F-Food Catalog including digital labels and a set of indices assessing biopotential. The F-Food system is based on EU food law regarding nutritional claims, specifically reference doses („significant amounts”), generally equal to 15 % of the Reference Intake. The concept of reference doses was used to define synthetic (aggregated) indices assessing the potential and dietary value of products. This paper presents a triad of synthetic dietary indices – the Energy Density Index (EDI), the Bioactive Potential Index (BPI) and the Nutrition Density Index (NDI), which constitute a valuable source of information on both the energy and nutritional value of food for use in digital dietetics. The Superfood Website was proposed as a graphical representation of the nutritional value of products. The website organizes products according to the BPI Index (and, as an alternative, NDI), allowing to group products that are poor and richest in bionutrients, as well as high-calorie and lowcalorie.
