Water vapour adsorption of food powders

Abstract

In the paper main issues related to water vapour adsorption of food powders were discussed. The role of food powders in food technology was presented and water vapour adsorption isotherms of food powders were characterised. The special attention was paid on water adsorption kinetics and the mathematical models describing water adsorption kinetic were presented.
