Influence of coating on water vapour adsorption kinetic of cacao drink powder

Abstract

The aim of this work was the analysis of coating influence on sorption properties of cacao drink powder, taking into consideration mixture composition and kind of coating substance. Scope of the work included influence of cacao drink powder ingredients (sugar, cacao, maltodextrine and milk powder), agglomeration and coating on water vapour adsorption rate. It was concluded, that coating of cacao drink powder with cacao and sugar as ingredients as well as cacao drink with maltodextrine additon, have significant influence on water vapour adsorption rate.
