Title

Effect of probiotic bacteria on rheological properties of raw-ripening hams

Abstract

The objective of the research study was to assess the rheological properties of raw-ripening hams with the addition of Lactobacillus casei ŁOCK 0900 probiotic bacteria. Four variants of samples were prepared: K control sample (without the probiotic added), L sample (with the probiotic added), LG sample (with the addition of probiotic and glucose), and LGA sample (with the addition of probiotic, glucose, and sodium ascorbate). The ripening process of raw-ripening hams lasted 28 days. The following was determined: basic chemical composition, productivity, and acidity. The texture parameters were determined using a TPA test and by measuring the parameters of cutting force and cutting work as well as the penetration force. The analysis was performed immediately after the production and after the 5 month storage at a temperature of 4° C under the anaerobic conditions. The addition of Lactobacillus casei 0900 ŁOCK probiotic bacteria to the raw-ripening hams impacted the acidity of the ham products, their acidity increased compared to the control sample. The hams with the probiotic added were characterized by similar values of texture parameters during the compression test. The variants with probiotic bacteria added showed higher values of the cutting work parameters and of the penetration force both after the manufacturing process and the storage. The obtained results of the penetration force and cutting work measurements may prove the impact of the added probiotic bacteria on the inhibition of protein proteolysis and also on the loosening of ham structure.
